Healthy Halloween Treats!

With Halloween right around the corner and your costume finally picked out, it’s time to start preparing for the party!  Here’s some ideas on healthy snacks to keep everyone satisfied while feeling good too! Fruit and Veggie Platter:  Take your favorite fruits and vegetables and arrange them into your favorite Halloween icons like a Jack O’ Lantern or a skeleton.

Clementine Jack o’ Lanterns:  Peel enough clementines for your guests and then stick a small piece of celery into the top to act as the stem.  They look just like pumpkins!

Carrot Fingers:  Peel enough carrots for your guests and cut them in half.  Using whatever  dip you have chosen for the party, place a small amount at the top to stick either a pumpkin seed or sliced almond to look like a finger nail.

Banana Ghosts:  After peeling the bananas cut them in half.  Using cheerios or chocolate chips and peanut butter as a glue, stick them on the banana to make a spooky face!

Apple Mouths:  Once cutting enough red apples into slices, place 4-5 mini marshmallows between the two slices to look like teeth.  Fasten the two slices together using a tooth pick.

These healthy snacks will be just as big of a hit as your party will be!  Your guests won’t be able to keep their hands off of them!

Farmers Markets

I love just roaming around farmers markets, the colors, the smells, actually being able to talk with the farmers/fisherman/butchers. Perfect way to become more connected to what you put on your plates!

 

The other day I was actually only looking for a quick snack. After settling on a perfect pint of blueberries I began taking in all the market had to offer!

The more I looked, the more I though about what to have for lunch tomorrow & a summer salad came to mind. I only spent $3.50 and I had enough for two days!

 

I just took two ears of corn, summer squash, zucchini, and green beans. Washed them and I did pop them into the oven for a quick 5 minutes to soften with spices.

Then only thing I did before I ate it was sprinkle some balsamic vinegar on top. Absolutely amazing!!!

Table vs Couch

When what to eat for dinner is not the main topic of discussion... it then progresses to where to eat it! Ok you so made a bangin’ healthy meal... but where do you eat it? I get it, Beantown apartments are tiny and you are lucky if you have space for a dining area. Bringing attention to the food that we are eating helps to prevent mindless eating. Watching the season finale and all of sudden you look down and your meal is gone. Hmmm, maybe I am still hungry...sound familiar?

Try at least one meal a week without being on the couch, or if the coffee table is your only option, try to make it the best dinning experience as you can. No T.V., maybe candles, just talking and connecting with the people you live with.

Making your space inviting is the perfect way to help gravitate you towards the table. Make it funky and make it you. This is a hand-me-down old table & we set to jazz it up with mix-matched chairs. The original light fixture left much to be desired and as tight of a budget as we were on, I just refinished them.

"What's Fresh?"

The best part about living in the city is that I can go down to my local fish or meat market and ask “what came in today?!”

The topic comes up all the time in my house...what are we going to have for dinner?! So I have tried to get into the habit of popping into my local fish market and asking the owner what came in that day (in totally helps to be in Boston because we are costal and sea food is not only healthy it is to die for here!)

Well the other day it was haddock, super yummy white flakey fish. I purchased two fillets and was on my way. Quick stop at Whole Foods to grab a few extra things: I was on the lookout for a veggie and starch side as well as lemons. Super clean and healthy meal here you go!

I got home and diced up the potatoes that I bought put them in the bottom of the pan with a very small amount of olive oil, pepper, dill, and other spices (no salt). Then cut up my red peppers and put them into the aluminum foil (yes mum I promise from here on out I vow to use parchment paper instead) with the fish. I cut open the lemon, squeezed the juice right on top and added a bit of dill and pepper...that’s it. Wrapped it up and popped it into the oven.

When it was time to come out it was so juicy and amazing! 24 hours tops between sea and dish...now that is the best way to eat fresh!

 

 

 

 

Yummy Bites

think finger food, a yummy way to enjoy your favorite treats and keep the serving sizes low!  So I was first introduced to this recipe by a friend of mine via The Sweets Life yet I decided to make it my own and have a little fun with it.

What you need:

Package of Strawberries

8 oz of fat free cream cheese (trying to be healthy here kids)

3 tbsp powder sugar

1 tsp of vanilla extract (I added 1 tsp of Kallua as well, made it a little easier to work with as well as giving it a great taste)

1 graham cracker (put it in a bag and crumb it)

First comes hallowing out the strawberries...I don’t care what other blogs tell you it is a breeze, I consider myself pretty domesticated but come on! This is the most time consuming part of the whole thing so have no fear, eyes on the prize, and once you finish that you are half way home! Ps- make sure to cut the bottoms as well so they stand on their own.

Make the filling, add cream cheese, powdered sugar, vanilla extract and liqueur to taste, spoon the filling into a plastic bag, cut a small hole in a corner and you are set to start filling the strawberries!

One by one fill the berries, really do not need a lot and dip them in the graham cracker crumbs to lightly cover the top (less is more kind of thing).

I also made them in raspberry form, much easier because I did not waste a bunch of time cursing at the task of hallowing them out, however they do not stand on their own. Not really a big deal, I actually found them to be more yummy that way.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Think "Take In"

Yes, I get food cravings too, and you need to know when to indulge in those cravings rather than pushing them aside. It’s also important to know how to make them as healthy as possible! This meal with super yummy and healthier than anything I could have ordered via take out!

So we all love it when someone else does the cooking for us. Especially when you have a craving for something, but more often than not fat, cholesterol, sodium, and calorie contents are all through the roof when we order take out. I wanted...no, let me rephrase that...I NEEDED Chinese food the other night. I have not a clue why, but it was a craving that I could not shake. So instead of picking up the phone and ordering, I decided to look through my fridge and cabinets to see what I had and if I could dream up a healthy solution. I found pasta, broccoli, chicken breast, and a sesame marinade. Problem solved!!

It was super quick! The chicken was thin sliced so I popped them in the oven with only spices (NO salt!) on them. Boiled the pasta and steamed the broccoli over the boiling water. I then added the marinade, only needed 1 tbsp to do the job which only added 40 calories, but brought the sodium (590 mg) with it. However, this was split up between both my serving, my husband’s, as well as the leftovers, so in retrospect we did pretty well!

Try it out tonight instead of getting a hard work busting take out meal. This was ready in less than 15 minutes!! Pretty great if you ask me!

Greek Yogurt Mini Pops

Believe it or not...I have a wicked sweet tooth. These are the perfect solution! Greek Yogurt mini pops!

Introducing: Greek Yogurt Mini Pops!

         I do have a wicked sweet tooth, I mainly keep it under wraps but I will not deny my lack of willpower at times...awful right?!

         Ok these lil guys are PERFECT! I took blueberries and cut up a strawberry, put them in an ice cube tray and voila! Great little bite sized frozen dessert that is not going to send you on a guilt trip.

 

I used about 1 tsp of french vanilla Greek Yogurt in each cube with both a strawberry piece and a blueberry. Want to guess what the calories came out to be per cube?!

 

 

3.5 Calories!!!

 

Yup. And they are nice and chilly so they are great during the summer! Holy Moley I am in love!

Summertime Freshness

Fresh is the name of the eating game during the summertime! Farmers Markets, everything in season, or hey better yet grow your own!

Some of my best girlfriends were over recently...hmm crap what to make for healthy finger foods?! I have been growing herbs on our back porch so it was the perfect time to go straight from the plant, to the plate, to the belly :) Caprese Salad is one of my husband’s favorites & easy as one, two, three!

Cut up fresh tomatoes, pop some fresh mozzarella, and basil on top, then balsamic vinegar. Yum, yum, yum!
