The topic comes up all the time in my house...what are we going to have for dinner?! So I have tried to get into the habit of popping into my local fish market and asking the owner what came in that day (in totally helps to be in Boston because we are costal and sea food is not only healthy it is to die for here!)
Well the other day it was haddock, super yummy white flakey fish. I purchased two fillets and was on my way. Quick stop at Whole Foods to grab a few extra things: I was on the lookout for a veggie and starch side as well as lemons. Super clean and healthy meal here you go!
I got home and diced up the potatoes that I bought put them in the bottom of the pan with a very small amount of olive oil, pepper, dill, and other spices (no salt). Then cut up my red peppers and put them into the aluminum foil (yes mum I promise from here on out I vow to use parchment paper instead) with the fish. I cut open the lemon, squeezed the juice right on top and added a bit of dill and pepper...that’s it. Wrapped it up and popped it into the oven.
When it was time to come out it was so juicy and amazing! 24 hours tops between sea and dish...now that is the best way to eat fresh!
